Best Linguica Sausage Recipe
Ingredients
- 12 ounces linguica sausage, sliced
- 1 tablespoon olive oil
- 1 onion, finely diced
- salt to taste
- 3 pounds russet potatoes, peeled and cut to small pieces
- 2 quarts chicken broth
- 2 pounds kale, sliced
Instructions
- Heat oil in a skillet over medium-high heat. Add linguica sausage and cook until the sausage is cooked through and turns brown. Transfer it to a plate.
- In the same pan, add onions and salt. Cook until the onion has softened, for about 5-6 minutes. Transfer it to the plate.
- Add potatoes to the pan, then season with salt. Then add chicken broth, and increase heat slightly and bring it to a simmer. Then reduce the heat to medium-low and simmer for about 8 minutes or until the potatoes are tender.
- Using a potato masher, mash the cooked potatoes in the broth. Add kale to the broth.
- Add back cooked sausage and onions.
- Cook for about 30-45 minutes or until the kale is tender. Serve and enjoy!
