Best Linguica Sausage Recipe

Caldo Verde is a simple but hearty soup from Portugal. It’s made with linguica, a smoked cured pork sausage flavored with paprika and garlic. It’s a delicious and quick meal that is also comforting.
Servings: 4

Ingredients 

  • 12 ounces linguica sausage, sliced
  • 1 tablespoon olive oil
  • 1 onion, finely diced
  • salt to taste
  • 3 pounds russet potatoes, peeled and cut to small pieces
  • 2 quarts chicken broth
  • 2 pounds kale, sliced

Instructions 

  • Heat oil in a skillet over medium-high heat. Add linguica sausage and cook until the sausage is cooked through and turns brown. Transfer it to a plate.
  • In the same pan, add onions and salt. Cook until the onion has softened, for about 5-6 minutes. Transfer it to the plate.
  • Add potatoes to the pan, then season with salt. Then add chicken broth, and increase heat slightly and bring it to a simmer. Then reduce the heat to medium-low and simmer for about 8 minutes or until the potatoes are tender.
  • Using a potato masher, mash the cooked potatoes in the broth. Add kale to the broth.
  • Add back cooked sausage and onions.
  • Cook for about 30-45 minutes or until the kale is tender. Serve and enjoy!
