Also called “Lap Cheong Fried Rice”, this is a popular side dish made with Chinese sausage, rice, eggs, vegetables, and fried rice sauce. It has the perfect balance of sweet and savory flavors. What is Chinese Sausage?
Also known as Lap Cheong, Chinese sausage is a type of dried, cured sausage. It’s made with meat and seasoned with various seasonings such as soy sauce, rice wine, sugar, and other flavoring ingredients. The curing process helps to preserve the sausage and intensifies the flavor, and gives it a unique chewy texture.
What does it taste like? It is sweet, savory, with a nice umami flavor.
Tips for Cooking with Chinese Sausages
Ok, let’s get right to it. Here are the important things I have learned over the years about how to make the best fried rice.
- Use day-old cooked and chilled rice, as it’s drier and less sticky. White long-grain jasmine rice works the best. You can also use sushi rice or brown rice.
- Use high heat. This will help to brown the vegetables and rice, and will also prevent the ingredients from becoming soggy.
- Heat up the rice separately. This allows you to break up any large chunks of rice easily. It will also help to brown the rice slightly, achieving that restaurant look!
- Drizzle sesame oil at the end. It has a low smoke point, so don’t fry your ingredients with sesame oil. Instead, add it at the end to add nutty and aromatic notes to fried rice.
How to Make Chinese Sausage Fried Rice
This Chinese sausage fried rice is incredibly easy to make. Here’s how it goes:
First, get all your ingredients ready before cooking. This recipe cooks quickly, so you’ll need to prepare ingredients in advance.
Next, cook Chinese sausage and vegetables. Heat oil in a skillet and sauté garlic and Chinese sausage. Add vegetables and cook for 3-4 minutes until tender.
Scramble eggs. Push the vegetables to one side of the pan, and add the beaten eggs to the other side of the pan. Stir until the eggs are scrambled. Mix with veggies and remove from the skillet.
Then, stir fry rice. Heat oil over high heat and stir in rice and break up any large chunks with a wooden spoon. Sauté briefly and add back veggies and eggs. Add stir fry sauces and toss until everything is evenly coated.
Finally, season to taste and serve. Season with salt and pepper to taste. Drizzle with sesame oil and green onions.

How to Store Chinese Sausage
Unopened vacuum-packed Chinese sausage lasts for months at room temperature. Once opened, you’ll need to store them in an airtight container in the refrigerator. They’ll last for a couple of weeks in the fridge and about 3 months in the freezer.
Chinese Sausage Fried Rice Recipe
Equipment
- Non-stick Skillet or Wok
Ingredients
- 4 tablespoons vegetable oil
- 2 cloves garlic, minced
- 4 oz Chinese sausage, sliced
- 2 cups diced vegetables, frozen or fresh (I used frozen peas, carrots, beans, and corn)
- 3 large eggs
- 2 ½ cups packed cooked day-old rice, chilled
- 1/4 cup chopped green onions
For the Sauce
- 2 tablespoons light soy sauce
- 1 ½ tablespoon oyster sauce
- 1 tablespoon Chinese cooking wine, or other cooking wine
- salt and pepper, to taste
- 1 teaspoon sesame oil
Instructions
- Heat half of the oil in a large skillet over high heat. Add garlic and sliced Chinese sausage. Stir fry for about 1 minute.
- Add vegetables. It’s ok to add frozen vegetables to the pan directly. Sauté for 3-4 minutes until tender. Push the mixture to one side of the pan.
- Add the beaten eggs to the other side of the pan and stir until the eggs are scrambled. Mix with veggies and remove the eggs and vegetable mixture from the skillet.
- In the same skillet, heat the remaining oil over high heat. Add rice and break up any large chunks with a wooden spoon. Sauté for about 1 to 2 minutes.
- Add back the eggs and veggie mix, then add soy sauce, oyster sauce, and cooking wine. Stir fry for about 2 minutes, and make sure the sauce is evenly distributed.
- Taste and add salt and pepper if needed. Drizzle with sesame oil and green onions, toss and serve!
