For this recipe, we recommend leaving your meatloaf uncovered in the oven for a loaf that’s less likely to fall apart.
What Is The Best Meat For Lipton Meatloaf?
We recommend using lean (90/10 or 85/15) ground beef for this recipe. Look for ground round or ground sirloin. If you like, you can substitute with ground turkey for this recipe.
How Long To Cook Meatloaf?
This meatloaf will be fully cooked in 45-50 minutes. Be sure to let it cool for ten minutes before slicing, to ensure the loaf holds its shape.
What’s The Secret To Moist Meatloaf?
We recommend using 80/20 beef, since the fat provides lots of flavor and moistness. If you use leaner meat, you may end up with a dry meatloaf. Regardless of the type of meat you choose, it’s important not to overmix it, since this causes it to get tough and dry.

FAQs
Can I Substitute Onion Powder for Onion in Meatloaf?
Yes, you can. However, keep in mind that the texture and moisture content of onion powder are very different from fresh onions, which can affect the texture of the meatloaf.
To use onion powder as a substitute for fresh onions in meatloaf, use about 1 tablespoon of onion powder for every medium-sized onion. You’ll need to add a little extra water to the mixture to make up for the lack of moisture in the onion powder.
Do I Have to Soak Breadcrumb First?
There’s no need to soak the breadcrumbs beforehand, but doing so can add lots of moisture to your meatloaf. This is especially helpful if you’re using meat that’s very lean. Soak the breadcrumbs in milk for about 10 minutes, until they become soggy, then combine with the other ingredients.
What Can I Add to Meatloaf Instead of Breadcrumbs?
Haven’t got any breadcrumbs on hand? Crushed-up crackers work just as well and can even add more flavor to your meatloaf. You can make cracker “breadcrumbs” in the food processor, or by putting the crackers in a bag and crushing them with a rolling pin.
Why is My Meatloaf Dry?
Overmixing is the number one culprit for a dry, dense meatloaf. When the proteins in the meat are overworked, they can start to tighten up, giving you a tougher texture with less flavor. While you want the ingredients to be properly combined, don’t overdo it.
What Ingredient Keeps Meatloaf from Falling Apart?
To ensure your meatloaf stays together and maintains its moist, tender texture, be sure to use binding ingredients like eggs and bread crumbs. It’s important to ensure you’re not overcooking the meatloaf, since this can also cause it to fall apart.

Izzy says
Hi Angela, meatloaf sauce is optional for serving. You can use any sauce you like or make your own by combining ketchup, brown sugar, salt, pepper, and vinegar. Izzy
Simone Perich says
Izzy do you have measurements of the ingredients for the sauce?
Simone Perich says
thanks Angela I wondered too and thanks Izzy!

Great, easy recipe. We add chopped onion and diced green bell peppers sometimes.
Debra says
Ok, I made the sauce & poked holes in the meatloaf with my fingers, I poured the sauce in the holes & spooned the rest on top of the meatloaf. First I’d like to say that green peppers ruins a good meatloaf & also too many onions. I didn’t measure the sauce, I put the ketchup, br sugar, salt & pepper, I put a cpl TBL spoons worcershire sauce & put in on the meatloaf b4 baking, it is so yummy. I didn’t use vinegar. I didn’t measure anything but the worcershire sauce. I cook alot & don’t measure sometimes, when I’m baking I always measure! Thank you for the sauce idea
Kelli says
Green bell peppers are absolutely necessary for good meartloaf. So, my point is everyone has different tastes. Maybe it ruins your meatloaf, but not mine.
B says
Exactly what I was thinking! Don’t yuck someone else’s yum!
Holly P says
Green peppers add a lot of good flavor….in my opinion!

I have a similar recipe but mine uses 2 tbsp of mustard and a quarter cup tomato sauce plus some for brushing on the top to keep it moist during baking. Love this recipe and have shared it with my whole family.
