This Strawberry Hennessy is my top choice when I need a festive cocktail. It’s fruity, sweet, tangy, and refreshing. Add homemade strawberry syrup to the traditional cognac and you’ll get the flavor combo you never knew you needed!
To me, it’s the perfect cocktail for spring and summer – I like to serve it in a stylish glass and garnish with fresh strawberries and a lemon wedge! The rich, smooth taste of cognac is combined with bubbly champagne and sweet strawberry syrup for an incredibly delicious drink. With only 4 ingredients, making this fruity margarita is so easy!

The best thing about this recipe? Instead of using the store-bought strawberry syrup, I blended fresh strawberries to create a homemade syrup. It’s thick, tangy, refreshing, and has just the right amount of sweet – perfectly complementing Hennessy’s oak and vanilla notes. Once you try it, you’ll never make a strawberry Hennessy any other way. Make it for summer gatherings, Girls’ nights, or any cocktail parties when you need an impressive-looking drink!
What’s in a Strawberry Hennessy?
Though there’s no official strawberry variation of Hennessy, bartenders have been mixing this popular cognac with fruit for quite some time. The sweet-and-tangy taste of strawberries goes well with the smooth oak and vanilla flavors of cognac. Strawberry and “Henny” can be combined to make delicious margaritas and other cocktails.
Here’s what you’ll need to make this Strawberry Hennessy:
- Fresh strawberries make the best strawberry syrup. Store bought frozen strawberries work too.
- Hennessy – Use your favorite version of this famous cognac. Hennessy VS or Hennessy Black are more affordable options..
- Champagne – Use whichever bubbly you prefer for this drink. If you like, substitute with Prosecco or sparkling wine.
- Sugar – To add extra sweetness to your syrup.
- Ice – For a refreshing and cold drink.
How To Make Strawberry Hennessy
First, make the strawberry syrup. Add strawberries, sugar, and water to a large saucepan over medium-high heat. Bring to a boil, then turn the heat down and let it simmer for 15 minutes. Blend your strawberry mixture and strain the syrup. Let it chill. Tip: Make this ahead of time and keep it in the fridge for about 2 weeks.
Next, mix everything in a cocktail glass. Add ice and strawberry, and then pour in Hennessy, and Champagne. Top your glass with strawberry syrup. Stir gently to mix. Garnish with a lemon wedge. Tip: Chill your ingredients before mixing for an extra refreshing drink.
Finally, taste and adjust. The secret to making any killer cocktail is to adjust it to taste. If you prefer a stronger margarita, add a splash more Hennessy. If like a sweeter drink, stir in more strawberry syrup. Want it to be more bubbly? Add more champagne then. Tweak the ingredients until you find the best balance!

- 2 oz Hennessy
- 4 oz champagne
- ice
- fresh lemon and strawberries, for garnishing
Strawberry Syrup*
- 3/4 pound strawberries**
- 1/2 cup sugar
- 1/2 cup water
Instructions
- Make the Strawberry Syrup: Prepare the strawberries by removing green leaves and cutting them into thin slices.
- In a saucepan over medium-high heat, add strawberries, sugar, and water. Bring to a boil.
- Once boiled, turn the heat down and let it simmer for 15 minutes.
- Remove from heat. Blend the strawberries with a blender. (I used an immersion blender).
- Strain the strawberry syrup through a sieve. (Make sure not to press the strawberries too hard, so your drink can stay clear.)
- Let it chill in the fridge.
- Make Strawberry Hennessy Cocktail: In a wine glass or cocktail glass, add ice and fresh strawberries.
- Pour in Hennessy and Champagne. Top the glass with strawberry syrup (You'll only need a small portion of the syrup you made. Save the rest in the fridge). Mix gently. Serve and enjoy!
- Strawberry Hennessy is best enjoyed fresh, so serve it immediately.
Notes
- *You can make strawberry syrup ahead of time and store it in an airtight container in the refrigerator for about 2 weeks. You’ll only need a small portion for this recipe.
- ** Use fresh and ripe strawberries that are sweeter and more flavorful. Frozen ones will work too.
- Make sure to strain the strawberry mixture to remove pulp and seeds for a smoother drink. To prevent your drink from getting cloudy, DON’T press the strawberries into the syrup too hard.
- You can customize the level of sweetness of your drink. Start with less amount of strawberry syrup and slowly add more. Taste and adjust for the perfect flavor.
- Pour the champagne into the glass slowly to prevent it from overflowing.
