    What is Dover Sole?

    Dover sole is a firm-textured white fish. It is also known as slime or slippery sole because of the mucous it excretes which makes it difficult to hold. Dover sole is low in calories and an excellent source of lean protein.

    The flavor of the Dover sole can be described as sweet and mild. Its firm texture has a meat-like quality making it an excellent fish to serve with heavy sauces.

    Ingredients You’ll Need

    • Dover Sole
    • Butter
    • Garlic
    • Lemon
    • Salt & Pepper
    • Parsley and Capers

    How to Cook Dover Sole

    • Melt the butter in a small frying pan over medium heat. Add the garlic and let it cook for 1 minute. Zest the lemon and add it to the butter.
    • Thinly slice the lemon and place the slices in the bottom of a baking dish. Save any extra slices for the top of the fish.
    • Pat the dover sole dry with paper towels and season both sides with salt and pepper.
    • Place the fillets on top of the lemon slices. Spoon or brush the garlic butter over the fish.
    • Bake at  425°F for 10-12 minutes or until the fish flakes easily with a fork. Serve garnished with parsley and enjoy!

    Cooking times will vary based on the thickness of the fish. In the baked Dover sole recipe included in this post, the fish is cooked for 10-12 minutes in a 425°F oven.

    How to Tell When the Dover Sole is Done Cooking

    Cooked dover sole will easily flake with a fork and the color is completely opaque when fully cooked. Raw dover sole has a slightly translucent color. If you prefer to use an instant-read thermometer to check for doneness, a reading of 140°F is the target temperature for fish. You’ll have to carefully insert the probe as dover sole fillets are quite thin. 

    Does Dover Sole Need to Be Flipped Halfway Through?

    No, turning the dover sole while it cooks isn’t necessary and can cause the fillet to fall apart.

    • 4 tablespoons butter
    • 3 cloves garlic minced
    • 1 lemon
    • salt and pepper to taste
    • optional minced parsley and capers for garnish
