Avocado Roll vs California Roll

A California Roll is a sushi roll that you can find on almost any sushi restaurant’s menu. It’s an inside out roll, meaning the rice is on the outside and the other ingredients (avocado, imitation crab and cucumber) are on the inside of the roll. The Avocado roll is another inside-out roll that only has avocado on the inside. The Avocado roll is a much simpler roll because it has less ingredients.

Ingredients for Avocado Roll

  • Sushi Rice: Sushi rice is a special type of short-grain rice that is used to make sushi rolls. Be sure to get authentic sushi rice because other kinds of rice such as basmati or long-grain rice will not stick and your roll will fall apart.
  • Sushi Vinegar: Sushi vinegar adds tasty umami flavor to your roll, which is a signature element of Japanese cuisine. You can also purchase rice vinegar to make your sushi.
  • Avocado: You’ll need a ripe avocado that is still firm enough to be neatly sliced. An overripe avocado will be too mushy and difficult to work with.
  • Nori / Seaweed Sheet
  • Toasted Sesame Seeds (optional)

You can find nori in the Asian aisle of most supermarkets. These are the black sheets of seaweed that helps keep your roll together.

How to Make Avocado Sushi

Step 1: Cook Sushi Rice

  • Add water and rinsed sushi rice to rice cooker. Cook according to the package directions.
  • Once cooked, transfer the rice to a large bowl and let it cool slightly. When it’s still very warm, stir in the sushi vinegar and mix gently.

Step 2: Slice the Avocado

  • Cut the avocado lengthwise until your knife has reached the pit.
  • Remove the pit, and peel off the skin. Then cut the avocado into thin slices lengthwise (about 1/3 inch).

Step 3: Make Avocado Rolls

  • Split nori sheet in half using a pair of scissors. Place half of the nori sheet on top of the bamboo mat, shining side facing down.
  • Take 3/4 cup of cooked rice and spread it over the nori sheet evenly.
Place avocado slices on top of the seaweed.
  • Flip everything so that rice is facing down.
  • Place avocado pieces on top of the nori.

  • Place the thumbs underneath the bamboo mat and lift the edge up and over the filling.
  • Roll the bamboo mat away from you and apply some pressure to tighten it up. Keep rolling until the ends meet. Remove the mat and plastic wrap. Then slice the roll into bite-size pieces. Serve and enjoy!

How to Pick an Avocado for Sushi?

The avocado you choose can make or break your sushi roll. If it’s not ripe enough, you won’t get to enjoy that sweet, creamy flavor that avocado is so famous for. If it’s too ripe, the avocado will be soft and mushy, making it difficult to neatly slice. You want an avocado that is ripe, but still firm. To choose the right one, give it a gentle squeeze and it should give just slightly.

How to Cut Avocado for Sushi Roll?

After cutting your avocado in half and carefully removing the pit, go ahead and gently peel off the skin. Cut the avocado lengthwise into thin slices, about 1/3 inch thick.

Is Avocado Sushi Vegan?

Yes, plain avocado sushi is vegan because all the ingredients (rice, avocado and nori) are plant-based and not made from animal products.

Variations

  • Salmon Avocado Roll: Salmon is a popular and delicious fish that can be added to this recipe. Be sure to get fresh, sushi grade salmon from a reputable source.

Ingredients 

For the Sushi Rice

  • 1 cup sushi rice, (uncooked short-grain sushi rice)
  • 1 cup water
  • 1 ½ tablespoons optional sushi vinegar, (or mixing 1 tablespoon rice vinegar, 1/2 tablespoon sugar)

For the Avocado Roll

  • 2 avocados, (ripe but still firm)
  • 2 sheets nori, (seaweed sheet)

Optional for Serving

Instructions 

Cook Sushi Rice

  • Rinse the sushi rice and add it to the rice cooker. Add water and cook according to the instruction. (You can also cook it in a regular saucepan on the stovetop.)
  • Once cooked, transfer the rice to a large bowl and let it cool down slightly. When it’s still very warm, stir in the sushi vinegar (or the mixture of rice vinegar and sugar).

Slice the Avocado

  • Cut the avocado lengthwise until your knife has reached the pit.
  • Gradually rotate the avocado in a straightly line until your knife has reached the starting point.
  • Rotate the avocado halves, twisting gently and separate the two sections.
  • Place the avocado on a cutting boarding. Hold it with one hand, and then tap the back edge of a knife into the pit. Twist and then lift the pit straight up to remove.
  • Peel off the skin. Then cut the avocado into thin slices lengthwise (about 1/3 inch).

Make Avocado Rolls

  • Lay out the bamboo mat with a piece of plastic wrap on top. This will prevent the rice from sticking to the bamboo.
  • Fold the nori sheet in half and split using a pair of scissors.
  • Place half of the nori sheet on top of the bamboo mat, shining side facing down.
  • Take 3/4 cup of cooked rice and spread it over the nori sheet evenly using your hands. (Dip your hands in Tezu vinegar water to prevent sticking.)
  • Flip everything so that rice is facing down.
  • Place 4 slices of avocado pieces on top of the nori.
  • Place the thumbs underneath the bamboo mat and lift the edge up and over the filling.
  • Roll the bamboo mat away from you and apply some pressure to tighten it up. Keep rolling until the ends meet.
  • Remove the mat and plastic wrap. Then slice the roll into bite-size pieces. Sprinkle with optional sesame seeds. Serve and enjoy!

Notes

  • Tezu water for dipping hands: Mix together 1/4 cup water and 2 teaspoons rice vinegar.
  • Make sure to use the ripe avocado that’s still firm for the best results.
  • To prevent sushi rolls from falling apart, you’ll need to squeeze the rice and filling while rolling. Once you finish, gently squeeze the roll one more time.
