Easy Leftover Rotisserie Chicken Noodle Soup Recipe

Chicken Noodle Soup is one of the best and easiest leftover rotisserie chicken recipes. It’s quick, flavorful, and comforting, one of my family’s favorite meals!
Servings: 6

Ingredients 

  • 12 oz leftover rotisserie chicken, shredded
  • 2 cups egg noodles
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 2 medium carrots, peeled and sliced thin
  • 2 stalks celery, sliced
  • 8 cups chicken broth
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • salt and pepper, to taste

Instructions 

  • In a large pot over medium heat, add the olive oil, garlic, onions, carrots and celery. Sauté for 3-5 minutes.
  • Add shredded rotisserie chicken, chicken broth, bay leaves and thyme. Increase the heat to high and bring the soup to a boil.
  • Remove chicken. Add noodles to the broth and bring to a boil, reduce heat to medium-low and simmer until noodles are tender.
  • Remove bay leaves and discard. Stir in the chicken.
  • Taste and season with salt and pepper to your preference. Serve and enjoy!
