What Is A Dynamite Roll Sushi?
A dynamite roll is sushi that usually contains tempura prawn or shrimp with cucumber, avocado, and mayonnaise. The seaweed (nori) is inside the roll (wrapped around the filling) and the rice is on the outside.
Ingredients You’ll Need
You will need these ingredients to make it:
- Cucumber: If possible, use Japanese cucumber as the American version has too many seeds and a thick skin.
- Sushi Rice: Short-grain rice that has been cooked the Japanese way (steaming rice seasoned with rice vinegar).
- Nori Sheets: Seaweed sheets can be found in Asian stores or in the Asian food section of your local supermarket.
- Tempura Batter: Whisk an egg and then add flour, cornstarch, curry powder and baking powder. Mix well and add ice water. This is what you will use to coat your prawns or shrimp.
- Tempura Shrimps: The main ingredient in this dynamite roll.
- Dynamite Sauce: A sauce made by combining mayonnaise with Sriracha hot sauce and roasted sesame oil. It is drizzled over the roll before serving.

How to Make Dynamite Roll

- In a small bowl, mix rice vinegar, sugar and vegetable oil together. Add this to your cooked rice and stir to coat the rice. Season to taste.
Step 2: Make the Sushi Roll
- Cover a bamboo mat with plastic wrap. Place a nori (seaweed) sheet on top and spread the rice over the sheet in a thin layer.
- Flip the sheet over (so the rice side faces down). Add mango, cucumber, avocado and tempura shrimp along one side. Take care not to overdo the fillings as this will make it difficult to roll.
- Using the bamboo mat to help you, carefully fold the roll over, squeezing it gently each time until you have a long cylindrical shape. Dip a sharp knife in water and use it to cut the roll into segments and then into bite-size pieces.
Step 3: Make Dynamite Sauce
- In a small bowl, combine the ingredients for the dynamite sauce.
- Drizzle the dynamite sauce over the pieces and sprinkle sesame seeds on top. Serve with Wasabi, pickled ginger and soy sauce.
Tips for Making the Perfect Dynamite Roll
- To prevent the rice from sticking to your hands: Before handling rice, you can dip your hands into Tezu water. It’s a hand-dipping liquid made with 1/4 cup water and 2 teaspoons of rice vinegar.
- To prevent sushi rolls from falling apart: You’ll need to squeeze the roll gently but firmly while rolling. Once you finish, you can place the bamboo mat over the sushi roll and gently squeeze the roll again.
How To Store Dynamite Rolls
These are the two best ways to store dynamite rolls:
- Fridge: Wrap each roll tightly in plastic wrap (so no air reaches it) and then place all the leftover rolls in an airtight container with a lid that seals properly. Store in the fridge for no more than 24 hours.
- Freezer: Follow the same process but place the container in the freezer for no more than 2 to 3 days.
