Classic Cucumbers and Onions in Vinegar

Cucumbers and Onions in Vinegar is a classic side salad that has been enjoyed for years! It’s full of texture and tangy flavor – perfect for the rich savory flavors of grilled meats. 

Ingredients You’ll Need

  • cucumbers
  • red onion
  • apple cider vinegar: You can also use regular white vinegar or rice vinegar.
  • water
  • sugar
  • salt and pepper
  • dill

How to Make Cucumbers and Onions in Vinegar

Step 1: Prepare the cucumber

  • Slice each cucumber thinly. Then slice them into half-moons.
  • Add sliced cucumbers and red onions to a large bowl.

Step 2: Make the Dressing

  • Whisk together the apple cider vinegar, water, sugar, salt, and pepper in a medium mixing bowl to make the vinegar dressing.

Step 3: Make the salad and serve

  •  Pour the vinegar dressing over the cucumber and onion and toss to combine.
  • Top with dill. Store in the fridge until ready to serve.

  • This salad can be made ahead of time and stored in an airtight container in the fridge until ready to use.

What Kind of Cucumber Works Best?

We recommend using English cucumbers for this recipe as they are easy to get and have the best flavor without bitter seeds. There’s no peeling required.

American or Kirby cucumbers also work, but you’ll need to peel them before using them.

How to Store and How Long Can You Keep Cucumbers in Vinegar?

Vinegar-marinated cucumbers and onions can be stored in an airtight container in the fridge for up to 3 days. The cucumbers will lose their crisp texture after 3 days. 

Variations

  • Add tomatoes to the salad for extra flavor and color.
  • Top the salad with fresh parsley, dill, or your favorite herb for a touch of additional flavor.

Ingredients 

  • 2 large cucumbers
  • 1 red onion sliced
  • 1/3 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon sugar
  • salt and pepper, to taste, we used 1 teaspoon for each
  • dill, for garnish

Instructions 

  • Slice each cucumber thinly. Then slice them into half-moons.
  • Add sliced cucumbers and red onions to a large bowl.
  • Whisk together the apple cider vinegar, water, sugar, salt, and pepper in a medium mixing bowl to make the vinegar dressing.
  • Pour the vinegar dressing over the cucumber and onion and toss to combine.
  • Top with optional herbs. Store in the fridge until ready to serve.

  1. Perfect! Thank you, Izzy. I pulled a cucumber out of my garden a few days ago and was wondering this morning what I should do with it. Then I remembered that my grandmother used to make a cucumber and onion (in vinegar) salad that I always loved. It’s my favorite way to eat cucumbers. So glad I found your recipe.

    Oh so delicious! I remember these from my childhood and haven’t had them in a really long time. So long that I forgot how much water/vinegar/water/sugar should go in it. Yours is very close but I remember my mom’s were always submerged in the brine so I doubled up on everything except for the cucumbers & onions. They were really large and I’m sure if I had only used half of what I had your measurements would have been perfect. Thanks for publishing this! I searched a long time before I settled on yours because it was so very close to my late mother’s.
