Ingredients 

  • 1 cup cooked beets, peeled and cut into small cubes
  • 1 clove garlic, pressed
  • 1/2 onion, chopped
  • 4 ounces feta cheese, cubed
  • 1 cup arugula
  • ½ cup roughly chopped walnuts

Dressing

  • ½ lemon, juiced
