Easy Roasted Beets Recipe

The next time you’re at the grocery store, pick up some beets. Whether you prefer them fresh, canned, or pickled, beets are an incredibly versatile vegetable.
Prep: 10 minutes
Cook: 1 hour
Total: 1 hour 10 minutes
Servings: 8 servings

Ingredients 

  • 8 fresh beets
  • 2 tablespoons olive oil
  • salt and pepper, to taste

Instructions 

  • Preheat the oven to 375°F.
  • Wash the beets under cold water and cut off the tops and bottoms. Cut the beets in half and toss with olive oil, salt & pepper.
  • Lay out a large piece of foil and top it with a piece of parchment paper. Wrap and seal the beets. As an alternative, the beets can be placed in a greased baking dish and covered.
  • Roast the beets for 1 hour or until they’re tender when tested with a fork.
  • Using rubber gloves or paper towels, rub the beets until the skins slide off.
  • Serve warm with butter or chilled in salads.
