Keto Mashed Green Plantains Recipe

Servings: 12

Ingredients 

  • 4 green plantains
  • 4 tablespoons butter
  • 1/4 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • salt and pepper, to taste

Instructions 

  • Peel the green plantains and cut them into small pieces.
  • Place the plantain pieces in a pot and add enough water to cover them. Bring to a boil over high heat.
  • Reduce the heat to medium-low and let the plantains simmer for about 20-25 minutes, or until they are tender and easily pierced with a fork.
  • Drain the water from the pot and mash the plantains with a potato masher or fork.
  • Add the butter, heavy cream, and grated parmesan cheese to the mashed plantains and stir until well combined.
