Pad See Ew Recipe Ingredients

Wide Rice Noodles

Traditional pad see ew uses fresh wide noodles called Ho Fun. You can find it at most Asian grocery stores (check the refrigerator section). 

However, I used dried wide rice noodles in this recipe, as they taste just like fresh ones. Plus, I can store them easily at home and make my pad see ew whenever I feel like it.

Rice noodles come in a variety of sizes. The noodles I use are ⅜” wide out of the package and expand to ½” wide after soaking.

Pad See Ew Sauce

This homemade sauce is made with soy sauce, oyster sauce, fish sauce, sugar, and white vinegar. I recommend using a combination of dark soy sauce and light soy sauce, as the dark soy sauce will give your dish a nice darker color.

Fish sauce is another ingredient that creates a special Thai taste. Don’t skip it if you want to create an authentic flavor. It smells stinky before cooking, but it adds a unique taste to the sauce.  

Chinese Broccoli

Also called gai lan, Chinese broccoli is the signature vegetable for pad see ew. It’s slightly bitter, but it pairs perfectly with the sauce. If you have any Chinese broccoli left, make sure to check my Chinese Broccoli with Garlic Sauce

Protein

My favorite protein for this dish is beef, but you can use pretty much any protein you like. Chicken, tofu, pork belly, or shrimp. They all work great with this recipe.

How to Make Pad See Ew in 3 Simple Steps

Tip: This dish cooks fast so it’s best to prep all of the ingredients ahead of time. That way you can easily add the ingredientos to the wok without rushing. 

Prepare the ingredients before stir frying

1️⃣ Prepare the ingredients for stir-fry (About 8-10 Minutes)

  • Prepare wide rice noodles: Soak the dried rice noodles according to the package instructions. Drain well.
  • Make Sauce: While you wait for the noodles to be ready, you can make the sauce and prepare the vegetables. In a small mixing bowl, mix the sauce ingredients.
  • Trim Chinese Broccoli: Cut off the tough ends of the stalk. Then separate the leaves from the stems. Slice the stems into smaller pieces.

2️⃣ Stir Fry (About 13-15 Minutes)

  • Beef: Saute thinly sliced beef until cooked. Transfer to a plate. 
  • Chinese Broccoli: Add garlic and stir fry Chinese broccoli until tender. 
  • Eggs: Push the vegetables to make space for the egg. Add the beaten eggs and scramble the eggs. Transfer the veggie and eggs to a plate.
  • Rice Noodles: Add the drained wide rice noodles to the pan. Stir fry until caramelized.

3️⃣ Combine (About 2 minutes)

Add everything to the pan and coat them with the sauce. Garnish with green onions and serve!

    Are Pad See Ew and Drunken Noodles the Same?

    The main difference between the two dishes is the taste. Drunken noodles are spicy compared to Pad See Ew which has a sweeter and salty flavor. In addition, Chinese broccoli is the main vegetable in Pad See Ew whereas Drunken Noodles usually include other vegetables like baby corn.

    Wide Rice Noodles with Pad See Ew Sauce

    Make sure to get ingredients ready before stir-frying as this dish cooks really fast.

    Servings: 3 to 4 people

    Ingredients 

    • 8 oz dried wide rice noodles
    • 5 stems Chinese broccoli
    • 2 tablespoons vegetable oil
    • 3 cloves garlic, minced
    • 6 oz beef, thinly sliced
    • 2 eggs, beaten
    • fresh ground black pepper, to taste
    • 1 green onions, sliced, for garnish

    For the Sauce

    • 1 tablespoon oyster sauce
    • 2 tablespoons light soy sauce
    • 2 tablespoons dark soy sauce, if you don’t have dark soy sauce, simply use extra light soy sauce
    • 1 tablespoon fish sauce, if you don’t have fish sauce, you can use 1 tablespoon of soy sauce
    • 1 tablespoon sugar
    • 1 tablespoon white vinegar

    Instructions 

    Prepare Ingredients for Stir fry

    • Prepare the rice noodles according to the package instructions. Drain well and set aside. While you are waiting for the noodles, you can prepare the sauce and vegetables.
    • Make the sauce by mixing all the sauce ingredients. Set aside.
    • Clean Chinese broccoli and cut off the tough ends of the stalk. Separate the leaves from the stems. Then cut the stem into diagonal slices.

    Stir Fry

    • Add 1 tablespoon of oil to a wok over high heat. When the wok is VERY hot, stir in beef slices, and stir fry for a few minutes until it’s cooked. Transfer the beef to a plate.
    • In the same wok, add garlic and saute for about 30 seconds. Add Chinese broccoli and cook for 2 minutes. The veggie will wilt quickly.
    • Push the vegetables to one side of the work, and add beaten eggs. Scramble the beaten eggs and mix them with the cooked vegetables. Transfer to the plate.
    • Add the rest of the oil to the wok. Once hot, add the cooked wide rice noodles, Chinese broccoli, eggs, beef, and the prepared sauce to the pan.
    • Mix everything. Garnish with green onions!

    Notes

    • Make sure not to burn the garlic. If you are a beginner, you can add the garlic to the cold wok.
    • You can use other vegetables such as bok choy, Chinese cabbage, and broccoli  for this recipe.
    • Besides beef, you can also use other proteins such as chicken and shrimp for this recipe.
    • Store the leftovers in an airtight container and it will last for 3-4 days. To reheat, microwave for 2-3 minutes until warmed through.
