This popular stir-fry Thai dish features wide rice noodles in a sweet and savory sauce with chicken and Chinese broccoli. It takes about 40 minutes to make and is restaurant quality!

If you are unfamiliar with the name, Wide Rice Noodles Pad See Ew might sound complicated, but it only takes about 40 minutes and a handful of ingredients to make. Your family (or friends) will definitely be impressed!
What are Wide Rice Noodles?
Rice noodles come in a variety of sizes and are used in many dishes such as Pad see ew. The noodles will expand slightly after cookinging.
If you use dried wide rice noodles, you’ll need to soak or cook them before stir frying. If you use fresh ones, you don’t need to precook them. They’ll be cooked in a couple of minutes when stir-fried.
Ingredients You’ll Need
- chicken breast
- soy sauce
- minced garlic
- sugar
- Chinese broccoli
- fresh wide rice noodles

How to Make Wide Rice Noodles Pad See Ew
- Combine the chicken with soy sauce and the minced garlic in a zip-top bag. Marinate for at least 20 minutes or up to 1 day.
- For the sauce, whisk together the soy sauce and sugar. Set aside.
- Heat a wok over medium-high heat. When it’s nice and hot, toss in the chicken and marinade. Simmer, stirring often, until the chicken is about halfway done and most of the marinade has cooked off.
- Add half of the soy sauce sugar mixture and the broccoli. Saute for 3-4 minutes until the broccoli is almost tender and the chicken is nearly cooked through. If the wok seems dry, add a few teaspoons of oil.
- Add the remaining soy sauce sugar mixture and the noodles.
- Continue to cook everything together, continuously tossing for another 1-3 minutes until the noodles are warmed through and coated in sauce.
Tips and Tricks
- This dish cooks fast so it’s best to prep all of the ingredients ahead of time. That way you can easily add the ingredients to the wok without rushing.
- Fresh rice noodles cook quickly. They’ll only need a couple of minutes in the wok, so watch them carefully. If using dried noodles that need to be pre-soaked, soak them for a couple of minutes less than recommended on the package. They’ll continue to cook when added to the sauce.
- The chicken in this dish is cooked along with the other ingredients. You can cook it separately if desired, and then combine all of the ingredients at the end.
- Instead of chicken, this dish can also be made with pork, shrimp, or tofu.
Substitute For Chinese Broccoli
Chinese broccoli, also known as ‘gai lan’, is typically available at Asian and international grocery stores. It has a flavor similar to broccoli, with small florets, long stalks, and tender green leaves. If you can’t source Chinese broccoli, a combination of finely chopped broccoli florets and baby spinach can be used instead.
Are Pad See Ew And Drunken Noodles The Same?
The main difference between the two dishes is the taste. Drunken noodles are spicy compared to Pad See Ew which has a sweeter and salty flavor. In addition, Chinese broccoli is the main vegetable in Pad See Ew whereas Drunken Noodles often includes other vegetables like baby corn.

Ingredients
For the Chicken
- 10 ounces chicken breast thinly sliced
