Vegetarian Crockpot Chili Recipe

Cook: 6 hours
Total: 6 hours 10 minutes
Servings: 6

Ingredients 

  • 1 can kidney beans, rinsed
  • 1 can black beans, rinsed
  • 1 can corn, rinsed
  • 1 cup yellow onion, diced
  • 1 cup red bell pepper, diced
  • 1 cup chopped carrot
  • 1 cup chopped zucchini
  • 2 cups tomatoes, diced
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tbsp fresh lime juice
  • 1 ½ tsp salt

Instructions 

  • Into a slow-cooker, add all the ingredients except the lime. Stir to mix everything within well.
  • Close the cooker and cook for 4 to 5 hours on high, or 6 to 7 hours on low, stopping only when the vegetables are tender.
  • Open the cooker and stir in the lime juice. You can add more salt to taste at this point if you wish. Serve and enjoy!
