Vegetarian Crockpot Chili Recipe
Chili is one of those dishes that is perfect to eat on a cold night, or on Sunday afternoon game days. This hearty version is full of protein-rich beans, veggies and seasonings, and will fill your home with delicious aromas all day.

- 1 can kidney beans rinsed
- 1 can black beans rinsed
- 1 can corn rinsed
- 1 cup yellow onion diced
- 1 cup red bell pepper diced
- 1 cup chopped carrot
- 1 cup chopped zucchini
- 2 cups tomatoes diced
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tbsp fresh lime juice
- 1 ½ tsp salt
Into a slow-cooker, add all the ingredients except the lime. Stir to mix everything within well.
Close the cooker and cook for 4 to 5 hours on high, or 6 to 7 hours on low, stopping only when the vegetables are tender.
Open the cooker and stir in the lime juice. You can add more salt to taste at this point if you wish. Serve and enjoy!
