Can I Make Stuffed Peppers without Rice?

Yes, traditional stuffed peppers include regular rice but these keto stuffed peppers use cauliflower rice instead! They’re full of the flavors you love and are a delicious keto-friendly option!

  • ground beef
  • bell peppers
  • onion
  • garlic
  • riced cauliflower
  • marinara sauce
  • dried basil
  • sea salt
  • ground pepper
  • 3-blend shredded cheese

How to Make Stuffed Peppers Without Rice

  • Wash the bell peppers, cut them in half and remove the membrane and seeds. Place the peppers in a baking dish, cut side up and sprinkle with salt and pepper.
  • Saute the ground meat in a skillet for about 6-7 minutes until cooked through. Drain the grease and transfer the meat to a bowl.
  • Saute the onion, garlic, and riced cauliflower for about 4-5 minutes, until softened.
  • Add the marinara sauce, basil, sea salt and ground pepper to the same skillet over medium low heat. Cook, stirring often for about 2 minutes.
  • Stir in the ground meat and continue to cook until heated through.
  • Stir in 1/2 cup of the shredded cheese.
  • Spoon the meat and sauce mixture onto the peppers. Add a small spoonful of marinara sauce and a sprinkle of shredded cheese on top of each pepper half.
  • Cover with foil and bake at 350°F for 30 minutes. Seve and enjoy!

Do You Have To Cook The Peppers Before You Stuff Them?

The peppers in this recipe aren’t cooked but you can absolutely cook them if that’s your preference. We find that the peppers hold their shape and have great texture when they’re not pre-cooked.

Can You Eat Bell Peppers on Keto?

Yes, as long as they fit into your daily carb allowance. Some keto programs follow a maximum of 20 carbs per day. A whole green pepper has about 6 grams of carbs and 2 grams of fiber for a net carb count of 4 grams.  

Can I Freeze Stuffed Peppers?

Yes, these stuffed peppers can be frozen. Just note that the cauliflower rice holds a lot of moisture so the peppers might be extra soft when you do bake them. 

One option is to freeze the peppers without stuffing them and then stuff them with the meat and cauliflower mixture just before baking. When you’re ready to bake the peppers there’s no need to defrost them first. They can be placed in the oven while still frozen. You’ll need to add about 15 minutes to the cooking time. 

To warm the stuffed peppers faster, use a microwave oven.  Heat them at 50% power for about 3 minutes. Check for doneness and continue to heat in 1 minute increments until done to your liking. 

Do I Have To Boil My Peppers Before Stuffing Them?

No, the peppers do not have to be boiled or pre-cooked. They’ll have a better texture and will easily hold the fillings when they’re stuffed raw. If you prefer to pre-cook the peppers, you can definitely boil them before stuffing.

Ingredients 

  • 1 lb ground beef
  • 3 bell peppers, mixed colors
  • 1/2 cup onion, chopped
  • 3 tsp garlic, minced
  • 2 cups riced cauliflower
  • 1 1/4 cup marinara sauce
  • 1 tsp dried basil
  • 1/2 tsp sea salt
  • 1/4 tsp ground pepper
  • 1/2 cup 3-blend shredded cheese
