If you love shrimp, then you are going to adore this hearty and satisfying shrimp soup recipe. Simmered with plenty of garlic, jalapenos, herbs, and a splash of lime, this soup is the ultimate comfort food.
Served in a bowl with cooked rice, cilantro, and some raw jalapenos, this soup packs a punch with its intense and savory taste. Everything about this soup is absolutely divine.
How to Make Shrimp Soup
- Melt butter in a large pot over medium heat. Toss in shallots and garlic and reduce heat. Sautée for about 5 minutes, until softened. Add flour, stir, and sautée for another minute.
- Pour in the tomato sauce and stir. Make sure there are no lumps, then add the seafood stock, chicken stock, jalapenos, bay leaves, and spices. Higher the heat to bring the soup to a boil. Then reduce to medium heat and simmer for about 30 minutes with the lid slightly open. Remove the bay leaves and jalapenos and add lime juice and salt.
- Adjust the heat back to high, bring to a boil again, and toss in the shrimp. Cook until shrimp are pink and opaque. Pour soup into bowls and add a scoop of cooked rice. Garnish with sliced jalapenos, chopped cilantro, and lime wedges, and serve.
How Long Should You Cook Shrimp In Soup?
Most shrimp cook in about 2 to 6 minutes, but it depends on the size. Jumbo shrimp may take a little more time. When the flesh turns pink in boiling water, the shrimp is fully cooked. It can be as little as 30 seconds for tiny shrimp and 6 or 7 minutes for colossal shrimp.
How Long Does It Take To Cook Frozen Shrimp In Soup?
If you are cooking your shrimp in a liquid (broth, sauce, etc.), then you should add the shrimp in early on when the ingredients are stewing. Turn off the heat and allow the shrimp to slowly thaw in the liquid before continuing to cook the soup. This can take anywhere from 5 to 10 minutes.

Ingredients

- 2 sliced jalapeños, seeded
- 3 small bay leaves
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon thyme, dried
- 1/4 teaspoon white pepper
- 1 pound shrimp, peeled and deveined
- 2 limes, cut into wedges
- fresh cilantro, chopped
- white rice, cooked

Notes
- If you prefer a spicier soup, leave the jalapeno ribs and seeds in the soup or use two jalapenos instead.
