What is Velveeta Cheese?

Originally introduced in the late 1920s, Velveeta is a processed cheese product that’s well-known for its  deep yellow color and velvety smooth texture. 

It is often melted and used as a dip for nachos, in green bean casseroles, and in macaroni & cheese dishes.

Because it consists mainly of whey protein concentrate, milk protein concentrate, milk, fat, and preservatives, it doesn’t meet the Food and Drug Administration’s criteria to be considered real cheese. Instead, it is labeled as a cheese product.

How to Melt Velveeta Cheese

Method 1: Melting Velveeta Cheese on the Stove (in a Saucepan)

  • Shred or cut the cheese into ½ inch cubes.
  • Melt some butter in a saucepan over medium/low heat. Stir the butter with a wooden spoon until it melts.
  • Add the Velveeta. 
  • Stir constantly until it’s at about the halfway point of melting. This will help to prevent it from burning. 
  • When the cheese has melted, add 7 tablespoons of milk and continue to stir until it has a smooth consistency.
  • Season with your favorite spices. Serve and enjoy. 

Method 2: Melting it in the Microwave 

  • Cut the Velveeta into small pieces.
  • Place a small amount of butter into a microwave-safe bowl,  followed by the cheese.
  • Place the bowl in the microwave and set the heat to medium. Cook the cheese for about 2  minutes.
  • Remove the bowl from the microwave when the cheese has melted, and stir well, ensuring that the cheese and the butter are fully combined and hot. Season with your favorite spices. Serve and enjoy.

Note that because no milk has been added, the cheese will have a thicker consistency. 

How to Melt Velveeta Cheese

Method 3: Melting it in a Slow Cooker

  • Cut or shred a pound of Velveeta into very small pieces.
  • Place the cheese into the slow cooker and cover with the lid. 
  • Set the slow cooker to low, and let the cheese heat for about 30 minutes, stirring occasionally. 
  • Once 30 minutes have passed, leave the cheese to continue cooking for 1-2 hours. Do not remove the lid or stir the cheese during this time. 
  • Season with your favorite spices. Serve and enjoy.

Method 4: Melting it in a Double Boiler

  • Cut the Velveeta into ½ inch cubes. 
  • Place water in the bottom half of the double boiler and bring it  to a boil. Reduce the heat when the water begins to boil. 
  • Add a small amount of butter to the upper half of the double boiler.
  • After it has melted, add the cheese.
  • Stir with a wooden spoon until  the butter and cheese are thoroughly combined and have melted into a smooth consistency . Season with your favorite spices. Serve and enjoy.

    Followed instructions as written – turned out perfectly!
    Used 16 oz of Velvetta & added 1 untrained can of rotel to the melted cheese/ milk mix in saucepan on stove- haven’t made this in like 45 years so it was nice to have the extra tips about the butter & milk! Perfect smoothness & consistency for dipping! ( or as a pour over sauce – maybe for meatloaf? Or pork chops…sausage & biscuits…lots of possibilities for the leftover dip if applicable)
