Ingredients You’ll Need

  • cube steak
  • olive oil
  • flour
  • onion
  • button mushrooms
  • cream of mushroom soup
  • onion soup mix
  • brown gravy mix
  • beef stock
  • thyme
  • cornstarch and water (optional)

How to Make Crock Pot Cube Steak

  • Heat a large skillet over medium-high heat and add the olive oil.
  • Dredge the cube steak in the flour and add to the hot oil. Cook for about 5 minutes or until the meat is golden in color. You may want to cook the steak in batches to avoid overcrowding the skillet. 
  • Place half the onion and mushrooms in the bottom of the crock pot. Place the browned cube steaks on top. Top with the remaining onions and mushrooms. 
  • Whisk together the cream of mushroom soup, onion soup mix, gravy packet, beef stock, and thyme in a medium bowl. Add to the slow cooker.
  • Cover and cook for 2 to 4 hours on high or 4 to 6 hours on low until the steak is tender and cooked through.
  • For a thicker sauce, make a slurry by mixing 1 tablespoon of cornstarch with 1 tablespoon of water. Pour into the sauce and cook for about 10-15 minutes until the sauce has thickened.

Tips and Tricks

  • Use low-sodium ingredients to reduce the amount of salt in this dish.  
  • For a smoother gravy, pour the sauce through a strainer before adding the cornstarch and water mixture, or give it a quick blitz with a hand blender.

  • 8 pieces cube steak, about 2-3 pounds
  • 2 tablespoons olive oil
  • 1 cup flour
  • 1 onion, sliced

  • 1 can cream of mushroom soup
  • 2 ounces onion soup mix, 1 packet
  • 1 ounce brown gravy mix, 1 packet
  • 1 cup beef stock
  • 2 teaspoons thyme
  • 1 tablespoon cornstarch, optional
  • 1 tablespoon water, optional
