Ingredients
- 1 1/2 lbs russet potatoes, diced
- 1 lb turkey kielbasa sausages, sliced
- 1 onion, sliced
- 1 cup sauerkraut
- 1 Tbsp unsalted butter
- ½ tsp ground black pepper
- ¼ tsp salt
Instructions
- Cover the potato with water in a large saucepan and cook for 5-7 minutes until just barely soft. Drain and set aside.
- Place the sausages and 1/2 cup of water in a large nonstick skillet over medium heat. Cook the sausages until the water has evaporated. Fry the sausages in the same skillet for 7-10 minutes until lightly browned. Remove the sausages and set aside.
- Add 1 tsp of butter or oil to the skillet if needed and saute the onions and sauerkraut for 3-5 minutes until the moisture has been absorbed and the veggies are golden.
- Push the onion mixture to one side of the pan.
- Add the boiled potatoes and the remaining 2 teaspoons of butter to the empty side of the pan. Gently toss the potatoes in the hot butter.
- Stir every 1-2 minutes until the potatoes are golden and crisp, about 4-5 minutes.
- Season with salt and pepper, as desired.
- Return the sausage to the pan and let it warm through for another 1-2 minutes. Serve immediately!
