Serve these tasty potato skins with crumbled bacon, shredded cheese, and sour cream! 

Ingredients You’ll Need

  • russet potatoes
  • olive oil
  • unsalted butter
  • shredded cheddar cheese
  • shredded mozzarella cheese
  • cooked bacon
  • salt and pepper
  • sour cream
  • green onion

How to Make TGI Friday’s Potato Skins

  • Preheat the oven to 425°F.
  • Scrub the potatoes thoroughly and allow them to dry.
  • Pierce each potato 4-5 times with a fork.
  • Rub the potatoes with olive oil and season lightly with salt and pepper to taste.
  • Place the potatoes on a baking sheet lined with foil or parchment paper and bake for 1 hour until tender.
  • Allow the potatoes to cool.
  • When the potatoes have cooled, set the oven to 375°F.
  • Cut each potato in half lengthwise.
  • Using a spoon, gently scoop out most of the white from each potato leaving about ¼ inch attached to the skin. Set the scooped out potato aside and use for another dish. 
  • Melt the butter and brush the insides of the potato skins. Bake them hollow-side down for about 10 minutes.
  • Remove the potatoes, brush the outside of the skins with butter, and gently turn them over so the hollow side is up. Bake for another 15 minutes, or until the skin gets crispy and the edges start to brown.
  • Sprinkle the cheese and bacon over the potato skins and return them to the oven for a few minutes until the cheese is melted and bubbling.
  • Serve with sour cream and chopped green onion.

Tips & Tricks

  • Be careful when scooping out the potato. You want the skins to remain intact in order to hold the toppings. 
  • To save on cooking time, use a microwave for the initial bake, and the regular oven for the second bake. Note that microwave cooking times will vary based on the size of the potatoes and the strength of the microwave. As a guideline, microwave the potatoes for 8-10 minutes and turn them over so they cook evenly. Test for doneness every few minutes until they’re soft. Allow them to cool, and then scoop out the potato and continue with the rest of the recipe.
  • The potato skins can be assembled in advance. Allow the potatoes to cool after crisping the tops and bottoms. Refrigerate until ready to serve and then add the cheese, bacon,  and bake until done. 

How Long Do You Cook TGI Fridays Potato Skins?

The initial bake time takes about 45 minutes in a 400°F oven. This step can be reduced to about 15-20 minutes by using a microwave oven instead. 

What Kind of Potatoes are Best for This Recipe?

Russet potatoes are the ideal potatoes to use. Smaller or thin-skinned potatoes tend to fall apart.

Can You Cook TGI Fridays Potato Skins In An Air Fryer?

Yes you can. Using an air fryer guarantees crispier potato skins! Set the air fryer to 380°F and cook the potato skins for about 5 minutes. Add an additional minute or two to make them extra crispy. 

Can You Cook Potato Skins From Frozen?

Yes, potato skins can be cooked from frozen without defrosting. If the skins are already filled, place them on a foil or parchment paper-lined baking sheet cheese side up. Bake in a preheated 350°F oven for about 15 minutes until the potatoes are heated through and the cheese is melted. Frozen potatoes can also be cooked in an air fryer at 370ºF for about 6-8 minutes.
