  • evaporated milk
  • whole milk
  • eggs

How to Make Sweetie Pie’s Mac And Cheese

  • Preheat the oven to 350°F and prepare a 9×13-inch casserole dish.  
  • Bring a large pot of lightly salted water to a boil and cook the pasta according to the package instructions. Drain and transfer the pasta to the prepared casserole dish.
  • In a large bowl, mix the evaporated milk, whole milk, and eggs with a fork or whisk until thoroughly combined. 
  • Add the butter, sour cream, and all the cheeses aside from the American to the pasta.
  • Pour the milk and egg mixture over the pasta. Season with salt, pepper, and sugar, and toss to combine.
  • Sprinkle the top of the pasta with the remaining cup of American cheese. Bake for about 30 to 45 minutes or until the top is a light golden brown.

Tips And Tricks

  • This dish can be made up to 2 days in advance. Prepare as per the recipe and tightly cover the casserole dish with plastic wrap. Remove the casserole from the fridge 30 minutes before baking, then continue with the recipe.
  • Feel free to switch up the different kinds of cheese. Gruyere, pepper jack, provolone, and fontina cheeses are good options.
  • If possible, use only freshly grated cheese as it melts better than pre-shredded cheese sold in bags.
  • Portion leftovers into small containers to easily grab and go as needed.

How To Store Sweetie Pie’s Mac And Cheese

Cool leftovers to room temperature and place them in airtight containers in the fridge for up to 5 days or in the freezer for up to 3 months. Thaw frozen leftovers in the fridge overnight before reheating. To reheat, place the leftovers in a baking dish and heat in a 350°F oven for 10-15 minutes until heated through. You can also reheat leftovers in the microwave at reduced power.

Ingredients 

  • 1 pound elbow macaroni pasta
  • 24 ounces evaporated milk
  • 1 cup whole milk
  • 3 eggs
  • 8 ounces butter, cut into small pieces
  • 2 tablespoons sour cream
  • 1/2 pound sharp cheddar cheese, shredded
  • 1/2 pound Colby cheese, shredded
  • 1 pound Velveeta cheese, cut into small chunks
  • 1/2 pound Monterey Jack cheese, shredded
  • salt and white pepper, to taste
  • 1 tablespoon sugar
  • 1 cup shredded American cheese
