This ribeye steak marinade acts as both a flavor enhancer and a tenderizer. Follow the steps in this recipe for ribeye steak that’s tender and loaded with flavor every time.  

Should You Marinate A Ribeye Steak?

Ribeye steaks are a flavorful cut with a lot of marbling. They don’t necessarily need to be marinated but will definitely have extra flavor if a marinade is used. 

Ingredients You’ll Need

  • soy sauce
  • lemon juice
  • olive oil
  • Worcestershire sauce
  • minced garlic
  • Italian seasoning
  • salt and pepper
  • ribeye steak
  • butter
  • fresh chopped parsley

How to Make Ribeye Steak Marinade

  • Whisk together the soy sauce, lemon juice, olive oil, Worcestershire sauce, minced garlic, Italian seasoning, salt, and pepper in a small bowl.
  • Place the steaks in an airtight container or a resealable freezer bag and add the marinade. Turn the steaks so all sides are coated. Marinate for at least 1 hour or overnight.
  • Heat a skillet over high heat. Pat the steaks with paper towels to remove the excess moisture. Add the steaks to the hot skillet and cook for about 3 minutes per side until brown. Reduce the heat to medium-high and continue to cook the steaks to the desired doneness. As a general guideline, medium-well steaks will take about 10 minutes.

Tips and Tricks

  • After marinating the steaks, pat them dry with paper towels as this will help to create a good sear and a tasty crust. Meat that has a lot of moisture will steam instead of sear. 
  • Place the butter in the pan just before you’re ready to use it. Butter burns easily at high temperatures. 
  • Let the steak rest for 5-15 minutes to allow the juices to redistribute throughout the meat. 

How Long Should You Marinate Ribeye For?

Ribeye can marinate for at least one hour and up to 24 hours. The longer the steak marinates, the more flavor it will have. 

How Do You Know Your Steak Is Done?

The best way to check a steak for doneness is to use an instant-read thermometer. Place the tip of the probe into the thickest part of the steak and follow the guidelines below for the desired doneness.

According to the USDA, steak must reach an internal temperature of 145°F to be safe to eat. Note that steak will continue to cook even after it’s removed from the heat, and the internal temperature will typically increase by about five degrees.

How to Tenderize a Steak

The easiest way to tenderize a steak is to use a marinade with an acidic ingredient like citrus juice or vinegar. A meat mallet can also be used to tenderize a steak. Remember to let the cooked steak rest for about five minutes and slice it against the grain.

Ribeye comes from the tender parts of the cow and is ideal for fast, high-heat cooking methods like grilling or pan-frying. Ribeye cooked to medium-rare or medium is juicy and tender.

Easy Ribeye Steak Marinade Recipe

Ingredients 

For the Marinade

  • 1/4 cup soy sauce
  • 1/4 cup lemon juice
  • 1/3 cup olive oil
  • 1/4 cup Worcestershire sauce
  • 1 tablespoon minced garlic
  • 2 tablespoons Italian seasoning
  • salt and pepper, to taste

For the Steak

  • 1 1/2 pounds ribeye steak
  • 2 tablespoons butter
  • fresh chopped parsley

Instructions 

  • Make the Marinade
  • Whisk together the soy sauce, lemon juice, olive oil, Worcestershire sauce, minced garlic, Italian seasoning, salt, and pepper in a small bowl.
  • Place the steaks in an airtight container or a resealable freezer bag and add the marinade. Turn the steaks so all sides are coated. Marinate for at least 1 hour (preferably 2 hours) or overnight.
  • Cook the Steak
  • Heat a skillet over high heat. Pat the steaks with paper towels to remove the excess moisture. Add the steaks to the hot skillet and cook for about 3 minutes per side until brown. Reduce the heat to medium-high and continue to cook the steaks to the desired doneness. As a general guideline, medium-well steaks will take about 10 minutes.
  • Top with a knob of butter and garnish with fresh chopped parsley.
