Hibachi Salmon (Japanese Steakhouse Style)

All it takes is the signature hibachi cooking oil (which is so easy to make) and you’ll soon have salmon that’s grilled to perfection. Serve it with rice and grilled vegetables for a fabulous weeknight dinner or a delicious date night for two!
What is Hibachi Food?
Hibachi-style food is simply meat, seafood, or vegetable dishes that have been barbecued or grilled on a very hot cooking surface. It is sometimes done over a ceramic or wooden bowl with charcoal burning underneath, giving the food a unique flavor. If you visit a Japanese restaurant, you’ll soon see that Hibachi cooking is designed to entertain restaurant patrons.
Ingredients You’ll Need
- sesame oil
- olive oil
- rice cooking wine
- soy sauce
- salmon fillets
- vegetable oil
- minced ginger
- garlic
- lemon
- freshly ground black pepper
- sesame seeds

How to Make Hibachi Salmon
- Mix the hibachi cooking oil ingredients together in a small bowl.
- Pat dry the salmon with a paper towel. Heat your skillet to medium-high heat.
- Pour about 2 tablespoons of hibachi cooking into the skillet and sauté the ginger and garlic until fragrant – about 1 to 2 minutes. Remove from the pan.
- Sear the salmon for about 4 minutes. Flip and sear the other side until the skin is crispy – about 3 to 4 minutes. Try not to overdo the salmon as it will still cook when removed from the heat. Ideally, the flesh should still be a little pink inside.
- Squeeze lemon juice over the fillets and season with freshly ground black pepper. Then remove from the heat and allow it to rest for about 5 minutes. Garnish with sesame seeds and serve with rice.

Tips and Tricks
- The ideal cooking surface for a hibachi meal is flat, like a Blackstone griddle, electric griddle, or skillet. However, you can easily use a nonstick skillet or frying pan.
- Use salmon fillets that are about 1-inch thick and as evenly shaped as possible. If frozen, ensure the fillets are completely thawed before cooking.
- Hibachi cooking oil is the signature blend that gives Hibachi food its unique flavor. You’ll learn how to make this easily below.
- Avoid overcooking the salmon as it will still cook when removed from the heat. Ideally, the flesh should still be a little pink inside.
What Seasoning is Used for Hibachi?
In hibachi cuisine, the three main flavors most commonly used are garlic, ginger, and sesame seeds. A whole clove of garlic will provide some taste when sautéed with fish, meat, or vegetables. However, garlic butter with minced garlic is often used to impart a really intense garlic flavor.
