What Is Hibachi Fried Rice? 

Traditional hibachi fried rice is made with Calrose rice and is cooked on a hot plate or griddle. The rice is seasoned with ginger, soy sauce, and sesame oil, and includes onions and scrambled eggs. The main difference between hibachi fried rice and Chinese fried rice is the type of rice used. Chinese fried rice is typically made with long grain rice.

Ingredients You’ll Need

  • oil 
  • eggs
  • butter
  • onions
  • ginger
  • rice
  • soy sauce
  • sesame oil
  • scallion

How to Make Hibachi Fried Rice

  • Heat a griddle or a large wide skillet over high heat. Add the oil and heat until hot. Add the eggs and quickly scramble, breaking up any large pieces. Remove the eggs to a bowl and set aside.
  • Add the butter to the skillet and heat until melted. Add the onions and cook for 3-4 minutes until softened. Add the ginger and cook for an additional 30 seconds before adding the rice and the eggs. 
  • Stir everything together until combined. Use a wide spatula to flatten the rice into a single layer and let it rest, untouched, for 30 seconds. Stir and repeat the process for another 30 seconds. The rice will begin to sizzle and pop. 
  • Drizzle the soy sauce and sesame oil over the rice and allow it to soak into the rice. Stir well to evenly coat the rice. It’s ready to serve when the sauce has been completely absorbed by the rice. 
  • Top with chopped scallions and enjoy!

Tips And Tricks

  • Leftover cold rice is ideal for Hibachi Fried Rice. If you don’t have leftover rice, you can use freshly cooked rice. After the rice is cooked, spread it out on a cookie sheet and place it in the fridge to cool for 30-60 minutes. 
  • If you don’t have a griddle, a large wide cast iron pan or skillet will work. 
  • Use a high smoke point oil. Peanut, canola, and corn oil are excellent options.
  • Be sure to use toasted sesame oil. Regular sesame oil doesn’t have the same delicious flavor.

How To Serve Hibachi Fried Rice

You can make Hibachi Fried Rice a one-dish meal by adding cooked chicken, meat, or shrimp. Frozen peas, carrots, or corn would be great too! It’s also delicious as a side dish.

Hibachi Fried Rice Recipe

Ingredients 

  • 1 tablespoon oil
  • 2 large eggs, lightly beaten
  • 1 tablespoon butter
  • ½ cup onions, chopped
  • 2 teaspoons ginger, grated
  • 3 cups cooked and cooled rice
  • 2 tablespoons soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 scallion , thinly sliced, for garnish

Instructions 

  • Heat a griddle or a large wide skillet over high heat. Add the oil and heat until hot. Add the eggs and quickly scramble, breaking up any large pieces. Remove the eggs to a bowl and set aside.
