    Ingredients 

    • 1/2 cup ground flax seed
    • 1/2 cup almond flour
    • 3/4 cup gluten free flour
    • 2 large eggs
    • 1/2 cup dairy free milk
    • 1 tsp vanilla
    • 1/3 cup coconut sugar
    • 3 tbsp granulated sugar
    • 1/4 cup oil
    • 1 tbsp baking powder
    • 2 tsp cinnamon
    • 1/4 tsp nutmeg
    • 1/2 tsp salt

    Instructions 

    • Preheat the oven to 350°F.
    • Line a muffin tin with liners or grease well. Set aside.
    • Whisk eggs in a large bowl.
    • Add the milk, vanilla, sugars and oil. Whisk until smooth.
    • Add the remaining ingredients and whisk just until all ingredients are incorporated.
    • Divide the batter evenly between the muffin cups.
    • Bake for 15-17 minutes, until a toothpick inserted in the center comes out clean.
    • The muffins can be left at room temperature for one day, or refrigerated or frozen to enjoy later.
