Easy Flaxseed Muffins Recipe
Ingredients
- 1/2 cup ground flax seed
- 1/2 cup almond flour
- 3/4 cup gluten free flour
- 2 large eggs
- 1/2 cup dairy free milk
- 1 tsp vanilla
- 1/3 cup coconut sugar
- 3 tbsp granulated sugar
- 1/4 cup oil
- 1 tbsp baking powder
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F.
- Line a muffin tin with liners or grease well. Set aside.
- Whisk eggs in a large bowl.
- Add the milk, vanilla, sugars and oil. Whisk until smooth.
- Add the remaining ingredients and whisk just until all ingredients are incorporated.
- Divide the batter evenly between the muffin cups.
- Bake for 15-17 minutes, until a toothpick inserted in the center comes out clean.
- The muffins can be left at room temperature for one day, or refrigerated or frozen to enjoy later.
