Easy Portobello Mushrooms Recipe

Cheese lovers will enjoy these baked portobello mushrooms. They’re stuffed with two kinds of cheese and then baked until tender.
Prep: 5 minutes
Cook: 20 minutes
Total: 25 minutes
Servings: 4

Ingredients 

  • ¾ lb portobello mushrooms
  • 1 teaspoon minced garlic
  • 2 tablespoons olive oil
  • ½ teaspoon dried thyme
  • ½ tablespoon butter
  • 1 tablespoon grated parmesan
  • 3 tablespoons shredded mozzarella
  • salt and pepper, to taste

Instructions 

  • Preheat the oven to 400°F. Wipe the mushrooms clean and remove the stems. Finely mince the garlic.
  • Lightly oil a baking sheet and place the mushrooms on top in a single layer with the open side facing up.
  • In a small bowl, mix together the olive oil, garlic, dried thyme, and salt and pepper to taste.
  • Evenly drizzle the mixture over the inside of each mushroom. Top each mushroom with a thin slice of the butter. Bake the mushrooms for about 15 minutes or until tender. While the mushrooms are baking, mix together the grated parmesan and shredded mozzarella.
  • After 15 min, top the mushrooms with the cheese mixture and return to the oven for 5 minutes or until the cheese is golden and bubbly. Remove from the oven and serve!
