How to Make Spicy Chicken Sandwich

Step 1: Marinate the Chicken

  • Cut each chicken breast in half crosswise to make 2 small pieces of chicken that are about the same size as the bun.
  • Mix together buttermilk, paprika, garlic powder, salt and black pepper into a large bowl. Add the chicken and place in the fridge to marinate for up to 24 hours.

Step 2: Fry the Chicken Chicken

  • Heat oil in a large pot over medium heat until the temperature reaches 350°F.
  • In a medium shallow bowl, whisk the flour, cornstarch, and spices. Drizzle 2-3 tablespoons of the buttermilk batter into the flour mixture and mix it with a fork.
  • Working with 1 piece at a time, dredge the chicken in the flour mixture, pressing the mixture to the chicken to form a thick crust. Transfer the chicken to the hot oil and fry for 3-5 minutes per side or until the outside is crispy and golden and the internal temperature reaches 165°F.

Step 3: Assemble the Sandwich

  • Melt 1 tablespoon butter in a large saucepan and toast the buns face down until golden and crisp. Whisk all of the mayo ingredients together in a small bowl. Spread the spicy mayo on the buns, add the chicken and your favorite toppings.

How To Make Spicy Mayo

Spicy mayo adds a delicious kick of creamy heat to spicy chicken sandwiches. Combine 1/2 cup of mayo with 1 teaspoon hot sauce, 1 teaspoon paprika or taco seasoning, and 1/2 teaspoon garlic powder. Whisk until combined and use on spicy chicken sandwiches and burgers.

Can I Make Chicken Sandwich in the Air Fryer?

Yes. Before frying, brush or spray the chicken with oil and place it directly into the air fryer. Air fry at 375°F for 20 minutes, flipping the chicken at the halfway point until it’s crispy and cooked through. Chicken is fully cooked when an instant-read thermometer reaches 165°F.
