Green Bell Pepper Fajita Stir Fry Recipe

Fajitas are a tasty meal that can be enjoyed with or without meat. This Chipotle copycat has all of the familiar flavors you love. Serve it with warm tortillas or as a side for dinner!
Prep: 5 minutes
Cook: 7 minutes
Total: 12 minutes
Servings: 4

Ingredients 

  • 3 tablespoons olive oil
  • 2 green bell peppers , thinly sliced
  • 1 large red onion , thinly sliced
  • 1/2 teaspoon dried oregano
  • salt , to taste

Instructions 

  • In a large non-stick skillet over medium-high heat, heat oil until it’s shimmering and very hot.
  • Add sliced bell pepper and red onions.
  • Toss them around and cook for about 5 minutes. Stir occasionally.
  • Season with oregano and salt to taste. Stir and cook for about 2 more minutes until the veggies are slightly softened but still look bright.
  • Remove from heat. Serve and enjoy!
