- Make boom boom sauce by combining the mayonnaise, honey, sweet chili sauce and hot sauce in a medium bowl.
- Add the buttermilk, egg, salt and pepper and combine using a whisk. A little at a time, mix in the cornstarch and flour until everything is incorporated. Set aside.
- Pour the breadcrumbs into a shallow bowl and set aside for the chicken.
- In a medium saucepan or skillet over medium-high heat, bring ½-inch oil to 375°F.
- Using a paper towel, pat dry the chicken to remove excess moisture. Dip each piece in the sauce, shake off the excess, and roll in the breadcrumbs until evenly coated. Fry the chicken in the hot oil for about 1 to 2 minutes, or until golden brown.
- Place the cooked chicken on a wire rack to cool slightly.
