Best Canned Pear Cobbler Recipe
Ingredients
The Filling
- 2 cans pear halves, 29 ounces each
- 3/4 cup firmly packed light brown sugar
- 3 tablespoons all-purpose flour
- 1/4 teaspoon cinnamon
- 1/8 teaspoon salt
- 2 tablespoons lemon juice, fresh or bottled
The Topping
- 1 cup all purpose flour
- 2 tablespoons sugar, plus more for serving
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup buttermilk, make your own buttermilk by adding 1 tablespoon lemon to 1 cup milk and set aside to curdle
- 3 tablespoons butter, melted
Instructions
- Preheat your oven to 375°F. Butter an 8×8 inch baking dish.
- Drain the canned pears and cut into chunks.
- Place the pears in the buttered baking dish and set aside.
- In a heavy duty saucepan combine the brown sugar, flour, salt, cinnamon and lemon juice. Over low to medium heat stir the mixture until it’s thick and melted down to a light brown color. Remove the saucepan from the heat as soon as the mixture has melted and pour over the pears in the baking pan.
- In a large bowl combine the flour, sugar, baking soda and baking powder. Whisk to combine. Add the buttermilk and melted butter. Beat with an electric mixer until just combined. Top the pears with large spoonfuls of the batter and sprinkle with sugar if desired. Bake for 30-35 minutes until the topping is golden brown and the filling is bubbly. Serve warm with ice cream or whipped cream.
