Ingredients
- 2 tablespoons olive oil
- 2 Italian sausages, casings removed
- 4 cups baby spinach, chopped fine
- 2 eggs, lightly beaten
- ½ cup ricotta cheese, drained
- ¼ cup parmesan cheese, grated
Instructions
- Place a nonstick skillet over medium-high heat. Add the oil and sausage meat. Fry it until browned slightly, using a wooden spoon to break up the clumps.
- Add the spinach to the pan, stir frying until wilted. Remove to a bowl and set aside to cool completely.
- In a medium bowl, mix the eggs, cheese and sausage mixture. Cover and refrigerate, using as directed in your ravioli recipe.
