Mexican Street Corn Salad Recipe
Ingredients
For the Salad
- 4 cups corn kernels
- 1 avocado
- 1/2 red bell pepper diced
- 1/4 cup purple onion diced
- 1 tablespoon cilantro finely chopped
- lime for garnishing optional
For the Dressing
- 2 tablespoons mayo
- juice from 1/2 lime
- 1/4 cup Mexican cream or sour cream
- 1/2 teaspoon paprika
- salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large mixing bowl, add all salad ingredients (except lime). Mix together.
- In another bowl, whisk together the dressing ingredients.
- Add the dressing to the salad and toss gently. Coat the salad evenly with the dressing.
- Garnish with lime wedges. Serve and enjoy!
