These mini carrot bundt cakes are a breeze to make using a cake mix. By just adding 2 extra secret ingredients, you will be able to make any ready cake mix taste amazing!

Ingredients 

Cake:

  • 1 carrot cake mix
  • 1 box box vanilla pudding mix
  • 3 large eggs
  • 1/2 cup canola oil
  • 3/4 cup water
  • 1 cup sour cream

Frosting:

  • 8 oz. cream cheese
  • 2 cup powdered sugar
  • 1/4 cup butter , softened
  • 2 teaspoon vanilla extract

Instructions 

  • Preheat the oven to 350°F.
  • In a medium mixing bowl, combine cake mix, pudding mix, water, eggs, and oil. Stir in the sour cream. Mix well.
  • Coat a mini bundt cake pan using nonstick cooking spray,
  • Fill each individual pan with batter using a spoon or a scoop.
  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool for 5 minutes in the pan. Remove the cakes from the pan and place them on a cooling rack to cool completely.
  • Combine the frosting ingredients in a mixing bowl with an electric mixer.
  • Fill a frosting bag with icing.
  • Squeeze the icing onto the cooled cakes. Serve and enjoy!
