    Ingredients 

    • 1 tablespoon vegetable oil
    • 1 pound ground chicken
    • salt and pepper to taste
    • 4 ounces mushrooms finely diced
    • 1/2 cup finely diced onion
    • 2 teaspoons minced garlic
    • 1 teaspoon minced ginger
    • 4 tablespoons hoisin sauce
    • 2 tablespoons soy sauce
    • 2 tablespoons rice vinegar
    • 1/3 cup sliced green onions
    • 1 head butter lettuce leaves

    Instructions 

    • Add oil to a skillet over medium-high heat. Once hot, add ground chicken, salt, and pepper.
    • Cook for about 5 minutes until cooked through, breaking up the meat with a wooden spoon.
    • Add mushrooms and onion to the pan. Cook for about 5 minutes or until the vegetables are soft. Add minced garlic and ginger. Cook for 1 more minute.
    • Whisk together the hoisin sauce, soy sauce, and vinegar. Pour the sauce mixture over the chicken. Toss to coat evenly. Sprinkle the green onions.
    • Spoon the chicken into the lettuce. Serve and enjoy!
