Ingredients
- 1 tablespoon vegetable oil
- 1 pound ground chicken
- salt and pepper, to taste
- 4 ounces mushrooms, finely diced
- 1/2 cup finely diced onion
- 2 teaspoons minced garlic
- 1 teaspoon minced ginger
- 4 tablespoons hoisin sauce
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1/3 cup sliced green onions
- 1 head butter lettuce leaves
Instructions
- Add oil to a skillet over medium-high heat. Once hot, add ground chicken, salt, and pepper.
- Cook for about 5 minutes until cooked through, breaking up the meat with a wooden spoon.
- Add mushrooms and onion to the pan. Cook for about 5 minutes or until the vegetables are soft. Add minced garlic and ginger. Cook for 1 more minute.
- Whisk together the hoisin sauce, soy sauce, and vinegar. Pour the sauce mixture over the chicken. Toss to coat evenly. Sprinkle the green onions.
- Spoon the chicken into the lettuce. Serve and enjoy!
