- 1 tablespoon vegetable oil
- 1 pound ground chicken
- salt and pepper to taste
- 4 ounces mushrooms finely diced
- 1/2 cup finely diced onion
- 2 teaspoons minced garlic
- 1 teaspoon minced ginger
- 4 tablespoons hoisin sauce
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1/3 cup sliced green onions
- 1 head butter lettuce leaves
Add oil to a skillet over medium-high heat. Once hot, add ground chicken, salt, and pepper.
Cook for about 5 minutes until cooked through, breaking up the meat with a wooden spoon.
Add mushrooms and onion to the pan. Cook for about 5 minutes or until the vegetables are soft. Add minced garlic and ginger. Cook for 1 more minute.
Whisk together the hoisin sauce, soy sauce, and vinegar. Pour the sauce mixture over the chicken. Toss to coat evenly. Sprinkle the green onions.
Spoon the chicken into the lettuce. Serve and enjoy!
