Keto Butter Chicken Recipe

Servings: 4 servings

Ingredients 

  • 1 ½ pounds boneless chicken thighs, cut into bite-size pieces
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon garam masala
  • 4 tablespoons butter
  • 1 tablespoon minced garlic
  • 2 teaspoons minced ginger
  • 14 ounces crushed tomatoes
  • 1/2 cup heavy cream
  • salt, to taste

Instructions 

  • Combine chicken with turmeric, cumin, and garam masala in a bowl. Combine until chicken is fully coated.
  • In a large skillet, heat 2 tablespoons of butter over medium-high heat. Toss in the chicken and cook until browned, turning occasionally. Transfer the chicken to a dish and set aside.
  • Melt the remaining butter in the same skillet over medium heat. Toss in ginger and garlic and sauté for 1 or 2 minutes. Add crushed tomatoes and heavy cream and bring the sauce to a simmer. Add the chicken back into the pot.
  • Reduce to medium-low heat and simmer for about 5 to 10 minutes until the chicken is cooked through and the sauce is reduced. Season with salt as desired.
