Carnivore Ice Cream Recipe

Made with only a few ingredients, this carnivore ice cream is so easy to make and will be your go-to-dessert when following a carnivore diet.
Servings: 4

Ingredients 

  • 2 cups heavy cream
  • 4-6 egg yolks
  • 1/4 cup beef tallow*, or butter
  • 1 teaspoon vanilla extract, optional
  • pinch of salt **, if desired

Instructions 

  • In a medium saucepan, heat heavy cream until hot but not boiling.
  • Whisk egg yolks in a mixing bowl until smooth.
  • Gradually pour the beaten yolks to the heavy cream, whisking constantly.
  • Cook mixture in a saucepan over low heat until thickened.
  • Add beef tallow to the pan, and whisk to melt completely. Cool slightly, then add vanilla extract and salt.
  • Refrigerate until chilled.
  • Churn in an ice cream maker.
  • Freeze until firm. Serve and enjoy!

Notes

  • * You can also use lard or unsalted butter.
  • ** Skip salt if you don’t like the savory taste in your ice cream. You can add cinnamon or cocoa powder.

    This is super yummy.my, our family is doing carnivore and whilst we never really had dessert before, I thought I’d treat the kids.

    One thing I did a little different from when I used to make icecream.

    I had my yolks in a reasonable sized bowl and when the cream was up to temp I slowly poured the cream in a steady flow into the egg yolk whilst whisking continuously, this allowed the yolks to come up to temperature whilst avoiding scrambling the eggs in the big pot of cream. I did this about half the cream mix then whisked the egg back into the cream and continue the process as per recipe above.

    Whilst cooling I placed a cartouche over the top so it didn’t form a skin whilst cooling.
