Servings: 8 slices

Ingredients 

  • 1 9- inch unbaked pie crust
  • 3 eggs, room temperature
  • ½ cup butter , softened
  • 1 ½ cups granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • ¼ teaspoon nutmeg, freshly grated

Instructions 

  • Preheat the oven to 350°F.
  • Line a 9″ pie plate with an unbaked pie crust.
  • Beat the eggs in a large bowl until foamy. Beat in the butter, sugar, and flour until fluffy.
  • Add the remaining ingredients and mix until smooth.
  • Pour into the prepared crust and bake for 45-55 minutes or until a knife inserted in the center comes out clean.
  • Cool completely before serving.
