Ingredients 

  • 2 cups almond flour
  • ¾ cup Swerve brown sugar alternative
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup unsalted butter, melted
  • ½ teaspoon vanilla extract
  • ½ cup sugar-free chocolate chips, divided

Instructions 

  • Preheat your oven to 325°F. Line a baking tray with parchment paper and set aside.
  • Combine the dry ingredients in a large bowl before adding the egg, butter, and vanilla extract. Add most of the chocolate chips, leaving a handful behind.
  • Stir until the dough begins to come together. Be careful not to overmix. Use your hands to divide the dough and roll into 1 ½ inch balls.
  • Using your palm or a flat-bottomed glass, press gently to slightly flatten the balls on the lined baking tray. Add the remaining chocolate chips into the tops of the cookies.
  • Bake until golden brown, which should take 15-18 minutes. Remove from the oven and allow them to cool before eating or storage.
