In this post, we’re taking a closer look at how to properly store salmon, including the length of time it can remain in the fridge.

How to Store Raw Salmon in the Fridge

Raw salmon should be stored in the fridge in an airtight container or a resealable plastic bag that has had the excess air removed. Ideally, the temperature of the fridge should be 32°F but most refrigerators are set higher at 38°F. To get around this, fill a large container like a roasting pan with ice and place the salmon (in the airtight container or resealable plastic bag) on top of the ice.

Pro Tips: In the restaurant world, experienced chefs often cover salmon fillets with salt to naturally remove the excess moisture from the fish. The liquid is then drained and the salmon is rinsed to remove the salt and is patted dry. This process helps to increase the salmon’s umami flavor.

How to Tell if Salmon Has Gone Bad

Our four basic senses of sight, smell, feel, and taste can help us determine if salmon has gone bad. Here’s what to look for:

Salmon

The Look

Spoiled salmon will be discolored. If it has any grey, black, or dark spots it should be discarded.

The Smell

An unpleasant odor is a key indicator that salmon has gone off. It may have a strong fishy odor or smell of ammonia. If the salmon smells off, it should be discarded.

The Feel

Cooked salmon that has spoiled will have a slimy or sticky texture when touched. Another sign of spoilage is the fish will be less flaky compared to when it was first cooked.

The Taste

If the flavor of the salmon is off or it has a different texture, it’s best to throw it away.

How to Reheat Salmon without Drying Out?

  • Use the oven to gently reheat the salmon. Salmon tends to dry out in the microwave.
  • Set the oven to 275°F and reheat for about 15 minutes. A little leftover gravy, stock, or water can be added to help keep the salmon moist.
  • Cover the salmon with foil to help it retain moisture.

Ways to Use Leftover Salmon

There are many ways to use leftover salmon. And because the fish is already cooked, you can have a delicious meal in short order! Here are some ideas:

  • Make a chowder or a soup by cutting the salmon into small pieces.
  • Add salmon to a casserole or a pasta dish.
  • Make a creamy salmon dip and serve it with raw veggies and crackers.
  • Turn a salad into a main-course meal by adding chunks of salmon.

Is it Safe to Eat Cold Cooked Salmon?

Yes, cold salmon is delicious and makes a great salad! Add mayo, chopped celery, and some seasonings and enjoy it with crackers or on bread as a filling sandwich! Cooked salmon is best stored in the fridge until it’s ready to be eaten.

Can I Store Cooked Salmon in the Freezer?

If you can’t use cooked salmon within a couple of days, it can be stored in the freezer for 6-9 months. Use an airtight container or a resealable plastic bag that has had the excess air removed. Label the container and place the salmon in the freezer until you’re ready to use it. Note that cooked salmon should be promptly placed in the fridge. If it’s left at room temperature for longer than 1-2 hours it should be thrown out.
