Ingredients 

  • 2 cups, almond flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup coconut oil, or olive oil
  • 1/4 cup keto-friendly sweetener
  • 3 large eggs
  • 1 teaspoon fresh lemon zest
  • 1/2 cup blueberries

Instructions 

  • Preheat oven to 350°F. Line a cupcake pan with paper liners and set aside.
  • Mix almond flour, salt, and baking powder together in a large bowl.
  • Toss in oil, sweetener, eggs, and lemon zest. Mix to combine fully.
  • Add in blueberries.
  • Evenly fill up each cup.
