Ingredients

  • 1 lb ground beef
  • 3 bell peppers mixed colors
  • 1/2 cup onion chopped
  • 3 tsp garlic minced
  • 2 cups riced cauliflower
  • 1 1/4 cup marinara sauce
  • 1 tsp dried basil
  • 1/2 tsp sea salt
  • 1/4 tsp ground pepper
  • 1/2 cup 3-blend shredded cheese

Instructions

  • Preheat the oven to 350°F.
  • Wash the bell peppers, cut them in half and remove the membrane and seeds.
  • Place the peppers in a baking dish, cut side up and sprinkle with salt and pepper.
  • Saute the ground meat in a skillet for about 6-7 minutes until cooked through. Drain the grease and transfer the meat to a bowl.
  • Saute the onion, garlic, and riced cauliflower for about 4-5 minutes, until softened.
  • Add the marinara sauce, basil, sea salt and ground pepper to the same skillet over medium low heat. Cook, stirring often for about 2 minutes.
  • Stir in the ground meat and continue to cook until heated through.
  • Stir in 1/2 cup of the shredded cheese.
  • Spoon the meat and sauce mixture onto the peppers. Add a small spoonful of marinara sauce and a sprinkle of shredded cheese on top of each pepper half.
  • Cover with foil and bake for 30 minutes. Seve and enjoy!
