- 16 ounces dried pinto beans
- 1 quart water
- 6 ounces tomato paste
- 2 teaspoons minced garlic
- 1 small diced onion
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- cayenne pepper to taste
- 1 tablespoon chili powder
- 1 teaspoon brown sugar packed
- salt and pepper to taste
Rinse beans well and place in a pot or bowl with 7 cups of water. Let beans soak overnight. Drain and rinse well the next day.
Add 4 cups of fresh water to a pot with the beans and bring to a boil. Lower the heat and allow the beans to simmer for about one hour and a half until beans are tender.
Add remaining ingredients and bring to a boil. Reduce heat again and simmer for an additional one to one and a half hours. Season with salt and pepper as needed.
