Ingredients

  • 4 white fish filets

For the Beer Batter

  • 1 cup beer
  • 1 cup all-purpose flour
  • 3 tablespoons cornstarch
  • 2 teaspoons baking powder
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Flouring Mixture

  • 1/2 cup flour
  • 2 tablespoons cornstarch

Instructions

  • Combine the batter ingredients and mix until a smooth batter forms. There should be no lumps in the batter. Set it aside for 30 minutes.
  • When you’re ready to fry the fish, add 2-3 inches of oil to a heavy saucepan and heat until it reaches 375°F, or preheat a deep fryer. Line a large plate or platter with paper towels and set it aside.
  • Combine the flouring ingredients in a small bowl and mix well.
  • Dredge two fish filets in the flour mixture and tap lightly to remove the excess flour.
  • Dip the floured fish filets into the batter ensuring that they’re covered with a thick coating of batter.
  • Gently place the filets into the heated oil.
  • Cook for about 4 minutes per side or until medium golden brown.
  • Remove and drain the fish on the prepared paper towels. Repeat with the remaining filets and serve.
