Carnivore Ice Cream Recipe

Ingredients

  • 2 cups heavy cream
  • 4-6 egg yolks
  • 1/4 cup beef tallow* or butter
  • 1 teaspoon vanilla extract optional
  • pinch of salt ** if desired

Instructions

  • In a medium saucepan, heat heavy cream until hot but not boiling.
  • Whisk egg yolks in a mixing bowl until smooth.
  • Gradually pour the beaten yolks to the heavy cream, whisking constantly.
  • Cook mixture in a saucepan over low heat until thickened.
  • Add beef tallow to the pan, and whisk to melt completely. Cool slightly, then add vanilla extract and salt.
  • Refrigerate until chilled.
  • Churn in an ice cream maker.
  • Freeze until firm. Serve and enjoy!

Notes

  • * You can also use lard or unsalted butter.
  • ** Skip salt if you don't like the savory taste in your ice cream. You can add cinnamon or cocoa powder.
