Ingredients

  • 1 pound cherry tomatoes
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 1 tablespoon chopped fresh basil

Instructions

  • Preheat your oven to 375°F (190°C).
  • Rinse the cherry tomatoes and pat them dry with a paper towel.
  • In a mixing bowl, combine the cherry tomatoes, minced garlic, and olive oil. Toss to coat the tomatoes evenly with the oil and garlic.
  • Season the tomatoes with salt and pepper to taste.
  • Arrange the seasoned cherry tomatoes in a single layer on a baking sheet.
  • Roast the tomatoes in the oven for about 20-25 minutes or until the tomatoes are slightly shriveled and beginning to brown.
  • Remove the baking sheet from the oven and sprinkle the chopped fresh basil over the top of the roasted tomatoes. Serve and enjoy!
