Keto Strawberry Cheesecake Recipe

Ingredients

For the Crust

  • 2 cups almond flour
  • 1/3 cup unsalted butter melted
  • 3 tablespoons monk fruit sweetener or other keto-friendly sweetener
  • 1 teaspoon vanilla extract
  • pinch of salt

For the Cheesecake

  • 1 pound fresh strawberries
  • 1/2 cup powdered monk fruit sweetener
  • 32 ounces full-fat cream cheese
  • 1/2 cup full-fat sour cream
  • 1/2 cup heavy cream chilled
  • 1/2 tablespoon vanilla extract
  • 1 teaspoon fresh lemon juice

Instructions

Make the crust

  • Grease a 9-inch springform pan on the bottom as well as the sides.
  • Mix the almond flour, butter, sweetener, vanilla, and salt in a large bowl until fully combined.
  • Press the dough into the springform pan firmly with your hands. Place it in the freezer to chill while you prep the filling.

Make the filling

  • Wash strawberries thoroughly. Discard stems and leaves, and dry them on a paper towel.
  • Place the strawberries in a blender and purée until smooth.
  • Strain the mixture through a sieve and add what’s left back into the blender.
  • Add the sweetener and cream cheese and blend until smooth. Next, add the sour cream, vanilla, and lemon juice and blend again until smooth.
  • Beat the heavy cream in a separate bowl with a mixer. Beat until stiff peaks begin to form. Mix the strawberry filling into the heavy cream.

Assemble the cheesecake

  • Remove the chilled crust from the freezer and pour the cake mix over it. Cover with plastic wrap and chill in the fridge for at least 5 hours (or overnight).

Decorate and serve

  • Once firm, run a knife along the edges of the springform pan to loosen the cake from the sides. Once the cake has been detached, you may open the springform pan and remove it.
  • Garnish with fresh strawberries if desired and serve.
