Keto Strawberry Cheesecake Recipe

For the Crust
- 2 cups almond flour
- 1/3 cup unsalted butter melted
- 3 tablespoons monk fruit sweetener or other keto-friendly sweetener
- 1 teaspoon vanilla extract
- pinch of salt
For the Cheesecake
- 1 pound fresh strawberries
- 1/2 cup powdered monk fruit sweetener
- 32 ounces full-fat cream cheese
- 1/2 cup full-fat sour cream
- 1/2 cup heavy cream chilled
- 1/2 tablespoon vanilla extract
- 1 teaspoon fresh lemon juice
Make the crust
Grease a 9-inch springform pan on the bottom as well as the sides.
Mix the almond flour, butter, sweetener, vanilla, and salt in a large bowl until fully combined.
Press the dough into the springform pan firmly with your hands. Place it in the freezer to chill while you prep the filling.
Make the filling
Wash strawberries thoroughly. Discard stems and leaves, and dry them on a paper towel.
Place the strawberries in a blender and purée until smooth.
Strain the mixture through a sieve and add what’s left back into the blender.
Add the sweetener and cream cheese and blend until smooth. Next, add the sour cream, vanilla, and lemon juice and blend again until smooth.
Beat the heavy cream in a separate bowl with a mixer. Beat until stiff peaks begin to form. Mix the strawberry filling into the heavy cream.
Decorate and serve
Once firm, run a knife along the edges of the springform pan to loosen the cake from the sides. Once the cake has been detached, you may open the springform pan and remove it.
Garnish with fresh strawberries if desired and serve.
