Keto Strawberry Cheesecake Recipe
Ingredients
For the Crust
- 2 cups almond flour
- 1/3 cup unsalted butter, melted
- 3 tablespoons monk fruit sweetener, or other keto-friendly sweetener
- 1 teaspoon vanilla extract
- pinch of salt
For the Cheesecake
- 1 pound fresh strawberries
- 1/2 cup powdered monk fruit sweetener
- 32 ounces full-fat cream cheese
- 1/2 cup full-fat sour cream
- 1/2 cup heavy cream, chilled
- 1/2 tablespoon vanilla extract
- 1 teaspoon fresh lemon juice
Instructions
Make the crust
- Grease a 9-inch springform pan on the bottom as well as the sides.
- Mix the almond flour, butter, sweetener, vanilla, and salt in a large bowl until fully combined.
- Press the dough into the springform pan firmly with your hands. Place it in the freezer to chill while you prep the filling.
Make the filling
- Wash strawberries thoroughly. Discard stems and leaves, and dry them on a paper towel.
- Place the strawberries in a blender and purée until smooth.
- Strain the mixture through a sieve and add what’s left back into the blender.
- Add the sweetener and cream cheese and blend until smooth. Next, add the sour cream, vanilla, and lemon juice and blend again until smooth.
- Beat the heavy cream in a separate bowl with a mixer. Beat until stiff peaks begin to form. Mix the strawberry filling into the heavy cream.
Assemble the cheesecake
- Remove the chilled crust from the freezer and pour the cake mix over it. Cover with plastic wrap and chill in the fridge for at least 5 hours (or overnight).
Decorate and serve
- Once firm, run a knife along the edges of the springform pan to loosen the cake from the sides. Once the cake has been detached, you may open the springform pan and remove it.
- Garnish with fresh strawberries if desired and serve.
