Spiced Apple Rings in a Jar

Ingredients

  • 6 medium-sized apples my favorite is Granny Smith
  • 2 tablespoons lemon juice to prevent browning

For the Syrup

  • 1 cup water
  • 2 cups sugar
  • 2 cinnamon sticks
  • 2 teaspoons whole cloves
  • red food coloring

Instructions

  • Add cold water to a large mixing bowl, then add lemon juice and mix well.
  • Wash and peel apples. Then slice them into ½-inch thick rings using a mandoline or a sharp knife. Use a small round cookie cutter or a piping tip to cut out the core from each apple ring. (You can also use the tip of the knife to cut around the core).
  • Place the apple rings in the lemon water mixture to prevent browning.
  • In a medium saucepan over medium-low heat, combine 1 cup of water, sugar, cinnamon sticks and cloves. Stir constantly until the sugar and candy dissolve. Add red food coloring gradually to your desired color. Mix well. Allow the mixture to come to a gentle simmer. Let it simmer for 3 minutes. Carefully remove the whole cloves.
  • Drain the apple rings from the water and add them to the syrup. Cook for 3-5 minutes over low heat or until the apples just start to soften but still hold their shape (Don’t overcrowd the pan. Cook in batches if needed)
  • Add apple rings to the mason jars leaving about ½-inch headspace. Pour the spiced syrup over the apples, covering them completely.
  • Use a non-metallic utensil to remove any air bubbles by gently pressing down on the apples in the jars. Cover with the lid and ensure the jars are properly sealed.
  • Store the spiced apple rings in the refrigerator for up to a week.
